Sweet Potatoes

Ingredients:
- 6 sweet potatoes
- 3 spoons of olive oil
- 1,5 spoon (vegetable) butter
- sea salt
- 1 pack coconut milk
- 4 spoons of sriracha
- Coriander
- whipped cream

Preparation:
- Preheat your oven at 230°C

- Mix the butter and olive oil together in a pan and let it melt together

- Peel the potatoes and cut them into small slices

- Butter your tin with the butter-olive oil mix

- Orden your potatoe slices in the tin and put some butter-olive oil mix on top of them

- Sprinkle some sea salt on top of the potatoes

- Grill them in the oven for about 1 hour and 15 minutes (it depends a bit on how thick your slices are)

- Take them out of the oven and let them cool down for a while

- Mix the coconut milk, whipped cream and sriracha on a medium temperature

- Pour the sauce over the potatoes and add some coriander on top

This dish is perfect as a main course, but can also be added as a side dish with some meat :)
