Healthy Veggie Salad

This week we got a guest blogger who made this delicious salad! Imke Claes is a diet expert and makes a lot of healthy dishes! You can follow all of her creations on her Instagram.

Ingredients (for 1 person):
- 70 gr. Veggie Quorn (Italian cubes)
- Goat cheese (Chavroux with chive)
- Chickpeas
- Quorn 
- Mixed salad
- Cherry tomatoes
- Cucumber
- Olive oil (to bake the Veggie Quorn)
- Seasoning of own choice (here she used pepper and spicy herbs mix) 

Preparation: 
- Bake the Veggie Quorn in a wok

- Clean all the vegetables and cut them into little pieces

- Mix the vegetables and the Veggie Quorn in a big bowl

- Add the goat cheese (around 50 gr.) and mix well
